Sunkist® Cara Cara Orange Infused Focaccia

Directions
- Add the flour, sugar, zest of 1 Sunkist® Cara Cara orange, and salt into a large bowl, set aside.
- In a small bowl or measuring cup, add the water and sprinkle the yeast and sugar mixture over the water, set aside until it proofs (doubles in size and become puffy).
- Once the yeast mixture has proofed, add it to the flour mixture along with the oil and Juice of 1 Sunkist® Cara Cara orange.
- Knead the dough by hand for approximately 10-15 minutes until a smooth dough ball form.
- Place the dough in a large oiled bowl, cover with plastic wrap and allow to rise in a warm draft free place until doubled in size.
- Once the dough has doubled in size, punch down to deflate it on a lightly floured surface (ex. kitchen counter).
- Add a few tablespoons of oil to the bottom of a baking tray and set aside.
- Transfer the dough to the baking tray and flip it over to coat both sides with the olive oil
- Use your fingers to poke deep holes into the dough over the whole surface. Poke all the way down until you touch the baking tray.
- Loosely cover the dough with plastic wrap and leave in a warm spot to rise until doubled again.
- While the dough is rising prepare the infused olive oil. Use a knife to carefully slice the rind off of the Sunkist® Cara Cara orange. Place the rind and ½ cup of olive oil in a medium size pot. Heat on medium heat for 10-15 minutes or until the oil is fragrant and infused. Allow to cool and remove the rind.
- Preheat your oven to 400°F.
- Once the dough has risen, sprinkle the coarse salt over the dough. Arrange the thinly sliced Sunkist® Cara Cara orange over the dough and place a rosemary sprig under each slice to create a flower design (i.e. the sliced Sunkist® Cara Cara orange will be the flower top and the rosemary sprigs act as the stem).
- Drizzle 1-2 tablespoon of the Sunkist® Cara Cara orange infused olive oil evenly over the top of the dough.
- Bake for approximately 20-25 minutes until crispy and light golden brown.
- Optional: drizzle with additional Sunkist® Cara Cara orange olive oil when it comes out of the oven for serving or serve on the side for dipping.
- Slice and serve warm. Enjoy!
