Citrusy Red Wine Beef Stew

  • 3 pounds cubed beef stew meat
  • 2 teaspoons salt
  • 0.5 teaspoon fresh ground black pepper
  • 2 large carrots
  • 1 large diced onion
  • 4 cloves chopped garlic
  • 2 large sprigs fresh thyme
  • 1 bay leaf
  • 3 tablespoons cornstarch
  • 0.5 cup red wine
  • 2 cups of freshly squeezed Sunkist® Valencia orange juice (about 2 oranges)


Preparation: 15 minutes

Cooking: 8 – 10 hours


  1. In a large bowl, toss beef with salt and pepper.
  2. Cut carrots into 1-inch pieces and add diced onion, garlic and herbs. Transfer to slow-cooker.
  3. In a small bowl, mix cornstarch, wine and freshly squeezed Sunkist® Valencia orange juice until cornstarch has fully dissolved. Pour over meat mixture.
  4. Cover with lid and set temperature to high. Cook for about 8 – 10 hours, until beef is fork tender.
  5. Add a squeeze of freshly squeezed Sunkist orange juice or a touch of freshly grated zest for a pop of flavor before serving.
