Zest the entire Sunkist® Blood orange and mix it with the sugar
In a cup, mix the soy milk and apple cider, wait a few seconds for it to curdle, and mix in all the other wet ingredients (Sunkist® Blood orange juice, vanilla essence, and melted butter
Mix 2/3rds of the Sunkist® Blood orange zest and sugar mix and add the flour, cardamom spice and baking powder
Pour the batter in a squeeze bottle and let it rest in the fridge for 5 minutes
When the batter is ready to fry, heat a non-stick pan at medium heat with some butter
Use the squeeze bottle to pour the batter in the pan making pancakes the size of a loonie (1$ coin)
In a minute or two, the top of the pancake will have visible bubbles with no wet batter. Flip and cook on the other side for another minute. I would recommend using an offset spatula and a chopstick for this operation.
When all the pancakes are done and still warm, sprinkle the rest of the blood orange zest and sugar on top of the pancakes.
