  • 1 Sunkist® Blood orange zest and juice
  • 1.5 tbsp of white sugar
  • .25 cup of soy milk
  • .25 tsp apple cider vinegar
  • 1 A pinch of salt
  • .25 tsp cardamom powder
  • .25 tsp of vanilla essence
  • .5 cup of all-purpose flour
  • 1 tsp of melted butter
  • .5 tsp of baking powder

Directions

  1. Zest the entire Sunkist® Blood orange and mix it with the sugar
  2. In a cup, mix the soy milk and apple cider, wait a few seconds for it to curdle, and mix in all the other wet ingredients (Sunkist® Blood orange juice, vanilla essence, and melted butter
  3. Mix 2/3rds of the Sunkist® Blood orange zest and sugar mix and add the flour, cardamom spice and baking powder
  4. Pour the batter in a squeeze bottle and let it rest in the fridge for 5 minutes
  5. When the batter is ready to fry, heat a non-stick pan at medium heat with some butter
  6. Use the squeeze bottle to pour the batter in the pan making pancakes the size of a loonie (1$ coin)
  7. In a minute or two, the top of the pancake will have visible bubbles with no wet batter. Flip and cook on the other side for another minute. I would recommend using an offset spatula and a chopstick for this operation.
  8. When all the pancakes are done and still warm, sprinkle the rest of the blood orange zest and sugar on top of the pancakes.
  9. Enjoy as a sweet snack
