  • 1.5 cups all purpose flour
  • 1 Tbs baking powder
  • 3 Tbs sugar
  • 0.5 tsp salt
  • 1 cup milk
  • 0.5 cup ricotta cheese
  • 2 eggs
  • 1 tsp vanilla
  • 2 Tbs fresh Sunkist® lemon juice
  • 1 Tbs fresh Sunkist® lemon zest
  • 2 Tbs butter for cooking
  • 1 tsp lemon juice
  • 0.5 tsp lemon zest


  1. In a large bowl, add in all your wet ingredients and mix well. Add in the flour, baking powder, sugar and salt and mix well. Do not over mix!
  2. Heat large skillet on medium heat and add a tsp of butter to melt and coat the pan.
  3. To make the mini pancakes, use a tablespoon to add your batter to the pan. Flip the pancakes after 1 minute and finish cooking on the other side. Repeat this process until the batter is finished.
  4. Add the pancakes to a bowl, top with greek yogurt, lemon juice and lemon zest.
