- In a large bowl, add in all your wet ingredients and mix well. Add in the flour, baking powder, sugar and salt and mix well. Do not over mix!
- Heat large skillet on medium heat and add a tsp of butter to melt and coat the pan.
- To make the mini pancakes, use a tablespoon to add your batter to the pan. Flip the pancakes after 1 minute and finish cooking on the other side. Repeat this process until the batter is finished.
- Add the pancakes to a bowl, top with greek yogurt, lemon juice and lemon zest.
