Meyer Lemon Pie Chia Pudding Cups

Inactive: 2 hours
- Mix Chia Pudding ingredients in a bowl and leave in fridge for 2 hours, or overnight.
- Mix Pie Filling ingredients in a small bowl, and over medium heat on stovetop, bring to a light simmer. The heat will pull out the flavors of the lemon, and some of the bitterness. Leave on heat for 3-5 minutes.
- Layer your lemon “pie filling” on top of your chilled chia base and enjoy!
