Pan Seared Halibut

ingredients
- 3 tablespoons butter
- 2 six-ounce pieces of halibut
- salt and pepper, to taste
- 1 Sunkist® Blood orange
- 1 Sunkist® Cara Cara orange
Directions
- Heat pan on medium heat and add 1 tablespoon butter.
- Pat halibut dry on both sides and carefully place in pan. Season halibut with salt and pepper.
- Sear halibut without moving for 3 - 4 minutes.
- Flip halibut over and add 2 tablespoons of butter.
- Cut Blood orange and Cara Cara oranges in half. Juice one half of the oranges over the fish. Segment the other half of the oranges, chop, and add on top of the fish.
- Cook for 2 - 4 more minutes or until cooked through.
- Serve immediately.
