  • 1 Sunkist® Blood orange, juiced
  • 2 tsp Sunkist® Blood orange zest
  • 2 potatoes
  • 2 carrots
  • 1 cup corn
  • 0.5 cup all purpose flour
  • 1 tsp baking powder
  • .5 tsp salt
  • .25 tsp black pepper
  • 1 egg
  • .25 cup vegetable oil to fry


  1. With a grater, shred the potatoes & the carrots.
  2. In a large mixing bowl, add the flour, the baking powder, the salt & pepper and whisk.
  3. Beat the egg in a small separate bowl & add the juice of one Sunkist® Blood orange.
  4. Pour the egg and blood orange juice mixture into the large mixing bowl (into the dry ingredients) and add the shredded potatoes, the carrots, the corn and the orange zest. Mix everything until well combined.
  5. Heat the oil in a frying pan over medium high heat.
  6. Scoop the mixture into the hot oil and flatten the surface with a spatula.
  7. Fry until golden brown on one side, then flip and fry until golden brown on the other side.
  8. Place the fritters on paper towel and let it drain.
  9. Plate them with your favourite sauce & enjoy!
