Pork Belly Tacos

ingredients

  • 1 pound skinless pork belly
  • 2 Sunkist® Cara Cara oranges
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 4 corn tortillas

Red Onion and Cilantro Citrus Salad ingredients

  • 1 Sunkist® Cara Cara orange
  • 1 red onion, thinly sliced
  • .5 bunch of cilantro, chopped

Chili Oil ingredients

  • 1 cup dried arbol chilies
  • .5 cup vegetable oil

PREP TIME

Preparation: 30 Minutes

Cook Time: 15 Minutes

Directions

  1. Season pork belly with salt and pepper and place in heated saucepan.
  2. Once pork belly has a visible crisp, squeeze the juice of two Sunkist® Cara Cara oranges onto the pork belly.
  3. Continue cooking until you visibly see a glaze over the pork belly (about 5 minutes).
  4. Heat the corn tortillas on a flat pan.
  5. Place 2-3 glazed pork belly chunks on each tortilla. Top with red onion and cilantro citrus salad (recipe below).
  6. Optional: drizzle chili oil (recipe below) on top of the tacos for a spicy kick.

Red Onion and Cilantro Citrus Salad

Directions

  1. Chop cilantro and thinly slice red onion, combine in a bowl.
  2. Squeeze the juice of one Sunkist® Cara Cara orange and mix ingredients together.

Chili Oil

Directions

  1. Add dried arbol chilies and vegetable oil in a blender or food processor.
  2. Blend until chilies are finely chopped.
  3. Drizzle on top of the tacos.
