Israeli Mandarin Couscous

ingredients
- 2 cups Israeli couscous, raw
- 4 tablespoons extra virgin olive oil
- 1 Sunkist® lemon, zest and juice
- 2 Sunkist mandarins, zest and juice
- 2 tablespoons Italian parsley, chopped fine
- 1 tablespoon mint leaves, chopped fine
- 1 tablespoon cilantro leaves, chopped fine
Directions
- In a medium sized sauce pot, bring 6 cups of water to a boil and add 3 tablespoons of kosher salt.
- Add the couscous and stir.
- Cook until ready, about 8 minutes.
- Drain the water and transfer the couscous into a mixing bowl.
- Add the oil and mix well; cool in the refrigerator.
- Once cooled, add the remaining ingredients and mix well.
