Israeli Mandarin Couscous

  • 2 cups Israeli couscous, raw
  • 4 tablespoons extra virgin olive oil
  • 1 Sunkist® lemon, zest and juice
  • 2 Sunkist Delite® mandarins, zest and juice
  • 2 tablespoons Italian parsley, chopped fine
  • 1 tablespoon mint leaves, chopped fine
  • 1 tablespoon cilantro leaves, chopped fine
Directions
  1. In a medium sized sauce pot, bring 6 cups of water to a boil and add 3 tablespoons of kosher salt.
  2. Add the couscous and stir.
  3. Cook until ready, about 8 minutes.
  4. Drain the water and transfer the couscous into a mixing bowl.
  5. Add the oil and mix well; cool in the refrigerator.
  6. Once cooled, add the remaining ingredients and mix well.
