Mandarin, Curry, Cashew Chicken Salad

  • 1 cup plain whole yogurt
  • 1 teaspoon curry powder
  • 1 Sunkist® lemon, freshly-squeezed
  • 2 coarsely diced roasted chicken breasts (from a store-bought rotisserie chicken)
  • 1 cup red cabbage, shredded
  • 2 green onions, chopped
  • 0.5 cup finely diced celery
  • 0.5 cup roasted cashews
  • 3 peeled and sectioned Sunkist® variety mandarins
  • Salt and black pepper
  • 2 halved whole wheat pitas

  1. In a large bowl, mix together the yogurt, curry powder and the lemon juice.
  2. Mix in the chicken, cabbage, green onions, celery and cashews.
  3. Add the mandarin sections and season to taste with salt and pepper.
  4. Serve in pitas.
