White Bean Sausage Soup

  • 0.5 pound hot Italian ground sausage
  • 1 small chopped yellow onion
  • 1 tablespoon fresh minced garlic
  • 1.5 cups water
  • 2 15 ounce cans white beans
  • 1 14 ounce can diced tomatoes with juice
  • 0.75 cup of freshly squeezed Sunkist® Navel orange juice (about 3 oranges)
  • 0.5 teaspoon salt
  • 0.25 teaspoon fresh ground black pepper

Cooking: 25 – 30 minutes

Directions

  1. In a heavy-bottom soup pot, cook sausage over medium-high heat for about 5 – 6 minutes, breaking up sausage with a spoon.
  2. Add onion and cook for about 1 more minute, then stir in fresh garlic.
  3. Add water, white beans with their juice, tomatoes with their juice, freshly squeezed Sunkist® Navel orange juice, salt, and pepper. Stir and bring to a simmer.
  4. Reduce heat to low and cook soup at a low simmer for about 10 – 15 minutes, until soup is slightly reduced.
  5. Scoop into bowls and serve immediately.
