Lemony Roasted Potatoes

  • 1.5 pounds large yellow potatoes
  • 1.25 cup olive oil
  • 0.5 cup freshly squeezed Sunkist® lemon juice (about 2 lemons)
  • 1 teaspoon salt
  • 0.5 teaspoon fresh ground black pepper


Preparation: 10 minutes

Roasting: 40 – 45 minutes


  1. Preheat oven to 425°F.
  2. Cut potatoes into wedges and toss in a large bowl along with olive oil, half of the freshly squeezed Sunkist® lemon juice, salt and pepper; toss to coat potatoes evenly.
  3. Spread potatoes out in a baking dish and drizzle with any oil and seasonings left in the bowl.
  4. Roast in preheated oven for 40 – 45 minutes, until potatoes are tender and golden.
  5. Remove from oven and drizzle with remaining freshly squeezed lemon juice and sprinkle with freshly grated zest before serving.
