Lemony Roasted Potatoes
Preparation: 10 minutes
Roasting: 40 – 45 minutes
- Preheat oven to 425°F.
- Cut potatoes into wedges and toss in a large bowl along with olive oil, half of the freshly squeezed Sunkist® lemon juice, salt and pepper; toss to coat potatoes evenly.
- Spread potatoes out in a baking dish and drizzle with any oil and seasonings left in the bowl.
- Roast in preheated oven for 40 – 45 minutes, until potatoes are tender and golden.
- Remove from oven and drizzle with remaining freshly squeezed lemon juice and sprinkle with freshly grated zest before serving.
