Salmon Soba Noodle Salad ingredients

  • 1 Sunkist® Blood orange
  • 1 bundle soba noodles or your favorite pantry noodle
  • 1 cup kale or leafy green
  • .5 avocado, sliced
  • 1 cucumber, sliced
  • 1 carrot, shredded

Salad Dressing ingredients

  • 1 Sunkist® Blood orange, juiced
  • 1 tablespoon rice vinegar
  • 1 tablespoon avocado oil or other neutral oil
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced

Salmon Soba Noodle Salad

Directions

  1. Boil the noodles according to the package’s direction.
  2. Drain and let cool in a large bowl.
  3. Add your favorite leafy green and add the noodles into bowl.
  4. Top with your favorite veggies.
  5. Toss with noodle salad dressing.
