  • 1 zucchini
  • 1 package of instant noodles
  • 1 stalk of green onions/scallions, finely diced.
  • 0.333 cup flour
  • 1 egg
  • 2 tsp salt
  • cooking oil
  • 0.5 Sunkist® grated lemon zest
  • 0.5 Sunkist® tbsp lemon juice
  • 1 tsp minced garlic
  • 0.5 cup Japanese mayo


  1. Make the instant noodles as per package.
  2. While that's cooking, wash and shred the zucchini into a paper towel. Squeeze all the water out as much as possible. Place it back into a dry bowl.
  3. Drain noodles and pat it dry as much as you can. Place into same bowl as the zucchini. Using food scissors, roughly cut the noodles so they're not so long.
  4. To the same bowl, add in lemon juice, green onions, flour, egg and salt.
  5. Mix well.
  6. In a pan, heat up the cooking oil. Using your hands, grab a small handful of the mixture and flatten it with your palm. Cook in the pan until each side is golden.
  7. To make the dipping sauce: add Lemon zest, Lemon juice, and garlic mayo to a small bowl and mix well.
  8. Enjoy!
